Introducing Martin Frickel

We are lucky enough to work with some amazing people, so it’s only natural that we should want to show them off from time to time. This month we’re introducing Martin Frickel.

Over the course of the last year or so, Martin has been delighting guests at Birkdale House with some of his private dining menus, experiences which will never be forgotten. From celebration meals to firepit feasts, whatever Martin cooks up is packed full of flavour and beautifully presented. Hardly surprising for someone who has worked in some of the Lake District’s best-known restaurants, including Michelin-starred L’Enclume in Cartmel and Forestside in Grasmere.

Sweet Treats by Martin Frickel

Like so many working in the hospitality sector, lockdown meant that Martin found himself with time to pursue ideas that had previously been put on hold due to the nature of working in busy kitchens.

Passionate about pastry, Martin established ‘Sweet Treats by Martin Frickel’, a selection of delicious brownies, blondies, rocky roads and cookie bars which are now available for our guests to order. These four variations will change regularly to reflect the seasons but will typically include favourites such as Salted Pretzel Caramel Brownie, White Chocolate and Raspberry Blondie and Oreo Shores Rocky Road, to name a few.

‘Sweet Treats’ by Martin Frickel are available as 2-piece, 4-piece or 6-piece boxes and are priced at £12.00, £24.00 and £36.00 respectively.

Mini Luxury Christmas Cake

For a limited time, Martin’s luxury Christmas Cake will also be available for our guests. This 9cm brandy-laced Christmas Cake is loaded with matured boozy fruits and finished with delicious roasted nuts and traditional fruits. Each cake costs £18.00, typically serves 4 and comes individually wrapped, ready for your enjoyment.

Lake District Private Dining

If you fancy a truly unique Lake District private dining experience, Martin’s menus have proved to be a huge hit since he started working with us last year.

The former Cumbria Life Rising Star (2017) and National Chef of the Year Finalist (2018) champions the region’s finest ingredients, often giving them a Scandinavian or Asian twist. From firepit feast favourites such as Lakeland Smoked Saddleback Pork Hot Dogs to the more traditional Lakeland Shorthorn Beef Fillet with Smoked Mash, you will not be disappointed. As Martin says, “It’s all about the flavour”, and his dishes certainly pack a punch!
